Ingredients
1 Onion, chopped
4 Cloves of garlic
4 Tablespoons of Virgin Olive oil.
2 Small carrots, grated
1/2 Cup of chopped green bell pepper
2 Bay leaves
1 Teaspoon of Oregano
1 Teaspoon of Thyme
2 Teaspoons of Basil
5 Tablespoons of chopped fresh parsley
4 Cups tomatoes, coarsely chopped
2 Six-ounce cans of tomato paste
1 Teaspoon salt (or 2 of Indo)
1/4 Teaspoon of fresh ground pepper
1 Teaspoon of raw unfiltered honey
1. Sauté onions and garlic until onion is soft. Crush garlic with fork.
2. Add carrot, green pepper, bay leaf, and herbs. Stir well, then add the tomatoes, tomato paste, and seasonings.
3. Simmer 20 minutes . Remove the bay leaves.
Makes about six cups.
